1kg fish bone
30 GM. Butter
100 GM. Onion
1 no.s. Lemon
2 litre. Water
1/4 kg. Mirepoix
As need. Bouquet garni
- Melt the butter in stock pot
- Add sliced onions , washed fish bones and other ingredients except water
- Cover with a. Lid and cook with out colouring for 3/4 minutes.
- Add water , boil and simmer for 15/20 minutes
- Strain.
